This week's recipe is Monterey Chicken. I found this recipe on Pinterest and quickly pinned it to my "Chicken Main Dishes" board. I adapted the recipe from therecipecritic.com.
Let's get started!
First take the honey, soy sauce, worcestershire sauce, minced garlic, and salt and combine in a small bowl to make your marinade.
Then cut your chicken breasts into tender sized pieces.
Add your chicken breast tenders into a plastic bag along with your marinade. Let your chicken marinade for at least an hour. The Hubs did this step for me this morning so it marinaded for about 6 hours.
Preheat your oven to 350°. Pour your chicken and marinade into a glass baking dish and cover with aluminum foil. Bake for about 30 minutes, until chicken is no longer pink in the center.
While your chicken is cooking, fry up your bacon.
Once your bacon is finished move it to a paper towel lined plate to drain the grease.
Grate your cheese after you're done with the bacon.
Pull the chicken out of the oven and check the temperature. I made sure each piece hit 160°.
Turn on your broiler. Transfer each piece of chicken to a foil lined baking sheet and cover with BBQ sauce.
Next, top your chicken with bacon.
And then sprinkle with Monterey Jack Cheese.
Pop in the broiler until the cheese gets bubbly.
Remove from the broiler.
And serve!
This is a small salad plate. I wanted to make sure no one thought I had huge mutant chicken breasts. Chris and I rarely eat a side dish. We tend to stick to mostly protein because it fills us up more and protein keeps you fuller longer. If I were to serve this with a side I think it would be good with some steamed broccoli.
This is the first time that I have made this particular meal and I have a different variation of this called Ranch Style Chicken that I adapted from Pioneer Woman. That version has a honey mustard sauce with lemon as opposed to the soy sauce based marinade and BBQ sauce. Chris and I adore that recipe so we figured we would give this one a try. If I were to make this again I think I would forgo the marinade and bake the chicken in the BBQ sauce. I'd also use less bacon. It kinda seemed like bacon overload and it took away from the flavor of the chicken. Overall this was a good meal and didn't take that long to make.
I'd rate this recipe a 3.5 out of 5 overall.
Ingredients
3 Tablespoons Honey
3 Tablespoons Soy Sauce
3 Tablespoons Worcestershire Sauce

2 Boneless Skinless Chicken Breasts
1 cup Monterey Jack Cheese
1 package Center Cut Bacon
1/4 cup BBQ Sauce
Preparation

2. Preheat the oven to 350°. Pour your chicken and marinade into a glass baking dish and cover with aluminum foil. Bake your chicken for about 30 minutes. While your chicken is cooking fry up your bacon and shred your cheese if you didn't buy pre-shredded. Transfer your cooked bacon to a paper towel lined plate to drain the excess grease.
3. Remove your chicken from the oven and set it to broil. Transfer your chicken onto a foil lined baking sheet. Cover your chicken with BBQ sauce, then bacon, and finally sprinkle with cheese. Broil until the cheese gets bubbly. Enjoy!
