Recipe Wednesday- Grilled Ribeye Steak with Caramelized Onions and Bleu Cheese Sauce



Not the steak!!!

I love a good steak.  If I have the option to go out to a nice dinner I will almost always choose to go to a steakhouse.  I finally found a good recipe that reminds me of a dinner I would eat in a steakhouse.  

This week's recipe is Grilled Ribeye Steak with Caramelized Onions and Bleu Cheese Sauce.  This recipe is pinned under my "Non- Chicken Main Dishes" board on Pinterest.com.  I adapted this recipe from The Pioneer Woman.  Click on the link and it will send you directly to her recipe.  

Sooo, let's get started!


First take your ribeye steak and set it out on the counter, allowing it to come to room temperature.  Season generously with kosher salt and freshly ground black pepper.  


Add 2 tablespoons of butter to a grill pan and cook your steak to desired doneness (or on your BBQ outside.)  I cooked mine to medium rare.  


Slice up your onion and add those to a heavy pan containing 4 tablespoons of butter.  Cook over high heat for about 5-7 minutes or until your onions are dark and caramelized.  


Don't forget to flip your steak!


Reduce the heat to simmer and add your cream.  Cook for 3-5 minutes or until reduced by half. 


Remove your steak from your grill pan and let it rest.  


Add half a cup of bleu cheese crumbles and stir until they are melted. 


I chose to cut my steak up before laying the pieces on top of my yummy onion cheese sauce.  Here is the finished product.  This is a small salad plate.  Chris and I shared the steak that night.  It was delicious and didn't take very long to make at all.  We will definitely be making this recipe again.

Grilled Ribeye Steak with Caramelized Onions and Bleu Cheese Sauce

Ingredients

1-2 Whole Ribeye Steaks
Kosher Salt
Freshly Ground Pepper
6 Tablespoons Butter
1 Large Yellow Onion
1 Cup Heavy Cream
1/2 Cup Bleu Cheese Crumbles

Preparation

1.  Salt and pepper both sides of the steak(s).  Grill in 2 tablespoons butter.  

2.  Saute sliced onions in 4 tablespoons butter over high heat.  Cook for 5-7 minutes or until dark and caramelized.  Reduce heat to simmer and pour in cream.  Cook for 3-5 minutes or until reduced by half.  Add bleu cheese crumbles and stir until melted.  

3.  Serve steak over a generous helping of onions and bleu cheese sauce.
